In The Kitchen with Ariel: Cinco de Mayo Cake!

With Cinco de Mayo right around the corner, why not take this Mexican holiday to spice up your life? Like any other holiday, we can see no better way to celebrate than with chocolate! Since it was the Mexican heritage that brought us chocolate in the first place, who better to look to for a recipe than those who started the chocolate craze?!

We celebrate Cinco de Mayo as a day of Mexican Heritage and Pride. The holiday of Cinco De MayoThe 5th Of May, commemorates the victory of the Mexican militia over the French army at The Battle Of Puebla in 1862.

So, in order to celebrate this day of independence…let’s go chocolate and take the cake! Can’t wait to hear what everyone thinks!

Mexican Chocolate Cake
Preheat oven to 350 degrees F.

1 cup honey
6 tablespoons cocoa
3 eggs lightly beaten
1 tablespoon vanilla extract
1/2 cup melted butter
1/4 cup flour
2 tablespoons cinnamon
1/2 cup of plain Greek-style yogurt
1/4 teaspoon ground chipotle peppers (cayenne will work, too)
Pinch of salt

Grease the sides and bottom of a 9-inch spring form pan (a pie tin would work equally as well).

Mix honey, cocoa, eggs, and vanilla together until well blended and no lumps remain. Add the butter and mix until combined. Add remaining ingredients and blend until just combined. Pour into your prepared baking dish and bake for 30 to 35 minutes or until a toothpick inserted in the middle of the cake comes out clean.

Allow to cool and serve topped with Coffee Cream.
